Ok, so that's it. I shall now provide a cross-section of what is the best rather unknown anime, by genre. All of this stuff is really good, good enough that I, an anime connoisseur, have watched it multiple times. I won't describe stuff that is popular, even though it might be really good.
Action:
Hunter X Hunter: The best analogy I can draw here is Hunter X Hunter is what Naruto would be like if you subtracted all the filler episodes and replaced them with character development. Though a bit dated, this series is highly addictive.
Speed Grapher: Nonstop gory action with a nice twisty plot. Modern, high-quality animation gives this series that cutting edge. Think Elfen Lied.
Read or Die: Slick, fast-paced action, and highly developed characters make this much better than your average heroine-vs-nefarious-organization.
Last Exile: Best animation I've seen in an anime, period, and an action-packed story to boot. Involves lots of steam-punk type airships. REALLY good.
Horror/Suspense:
Higurashi no Naku Koro ni: The scariest anime you will watch, period. Lots of blood, but what sells this is the slow buildup of suspense that'll have you rigid in your chair by the end of the arc. Comes with several different plot arcs using the same characters, each one just as good.
Paranoia Agent: Deep suspense and mystery, with subtle commentary on various aspects of modern life. Hard to understand at times, but addictive as hell. Very good animation.
Drama:
Saikano: The most realistic love story I've ever seen in an anime. Made me cry, and that is very, very difficult.
Toki wo Kakeru Shoujo: Short, touching film about a girl who briefly discovers the ability to jump short distances through time. Manages to avoid cliches and conveys a lovely sense of innocence in the main character.
Haibane Renmei: This could fit under slice-of-life, I guess. A story about gaining and losing friends, the quality of the animation and the amount of time spend developing the characters sets this anime apart.
Slice of Life/Comedy:
Azumanga Diaoh: You will laugh soooo hard at this slice-of-life, no matter what your gender or age. I thought I wouldn't like it, given my tastes, but it won me over.
Excel Saga: I've got to put this on here, because this is the single most whacked-out anime you'll ever see. Every episode is an parody of other anime themes, from power-ranger types to animal animes. Hilarious if you can keep up.
Comic Party: Comedy about creating fancomics, and not the retarded sheezy versions. Very accurate portrayal of the process of creating a comic, and has some truly funny characters. I love this series ^^
Magic User's Club: Magic-based comedy, made freaking hilarious because the main supporting character is GAAAAY as a mountain of fruitcakes and keeps trying to seduce the main charrie. Made me laugh so hard I had tears in my eyes.
