Healthy Chicken Soup
Hey there,
The people that know me in real life and have tasted my soups, always ask me for the recipe.
So now on SA I will be sharing this particular favorite of mine.
Ingredients
- 1 Chicken Carcass (preferably cooked and not picked clean and if there is stuffing in it, leave it, it all adds flavour.)
- 1 Onion
- about 20-30 baby carrots (preferably fresh, not tinned.)
- 1 leek
- 3 sticks of celery
- 1 normal sized carrot
- about 20 baby potatoes
- a large handful of parsly
- a medium handful of corriander
- teaspoon of dried herbs
- half teaspoon of black pepper
Extras for that extra yummyness/more food
- Cooking bacon
- savoy cabbage
Method
- Get a big soup pot
- stick in the chicken carcass
- fill the pot with water until you can only see the tip of the breast bone or if you are using a smaller pot, fill it half way.
- Add in the dried herbs and black pepper, remember, no salt yet.
- boil the carcass for 1hr on a low heat, until the carcass crumbles when you try to lift it.
- when the carcass gets to that stage, most of the chicken should have fallen off. Take a utensil spoon (the one with groves to let water through), and mix it for 30 seconds and begin to take out the bones. Make sure you take all of the bones out. Well try to. Don't forgot to throw back any good chicken.
- take your baby carrots and potatoes and dump those in (of course wash them first, but do NOT peel them and dont take the heads of the baby carrot).
- Chop your carrot roughly. Do not peel it, just wash it.
- Next the onion, cut the onions into ringlets and add them to the pot.
- I love cooked leek, so I always make the leek rings as big as possible (with in reason of course). Once you've chopped that, add it in.
- Coursely chop the parsely and corriander. Add it in.
- Chop the celery, make them about 1cm thick for each chop.
- Once you have added everything in, give it a good mix and make sure everything is wet.
- Stick the heat on medium and put a lid on your pot. Check back in 30 minutes to make sure the water level isnt too low. Add more water if needed.
- Now turn the heat down and cook for 2hrs.
- All veg should be softish and potatoes should be perfect.
- Only add salt if you need it when you are serving the bowls of soup.
Extra
- Cut the bacon in to fine pieces and add it when you have removed the bones.
- Chop the savoy cabbage into roughly 1cm strips and add when adding you veg.
